Vegetarian Bento ideas


My hubby is a vegetarian, so when the kids stay with him, it's nice to find some vegetarian options they can enjoy. I've made this list from what we've come up with, but I'm hoping to add to it with ideas from the web, later on.

Falafel!  I love these things way too much!



Vegetarian Bento ideas:
- rice balls with fillings like veggies stir-fried in soy sauce, ume plums, fruit
- mini-burritos with corn tortillas or lettuce wraps that contain beans, tomatoes, lettuce, avocado, whatever. Or an Indian version, with tomatoes, chickpeas, and cauliflower.
- vegetarian chili
- baked potato (especially little potatoes) with toppings like beans, veggie chili, roasted mushrooms or peppers, roasted veggies
- homemade buckwheat soba noodles with gf soy sauce, stir fried with veggies
- homemade peanut butter sandwich on GF bread
- homemade traditional injera bread wrapped around a lentil dish
- fried potatoes - these can taste really good with refried beans and chile
- veggie fajitas with corn tortillas, lettuce, or injera wraps
- a nut, seed, and dried fruit mix
- nuts and raisins added to a grain like rice
- falafel and hummus
- hummus with homemade grain or grain free crackers
- cabbage rolls with roasted veggies inside
- nut butters with items like fruit and veggies (apple and celery come to mind) to dip in it

Along with the above main dishes, additional bits of fruit and veggies are good to round it out with. :-)
