Stevia Syrup

I can have stevia as long as I grow it myself, so imagine how excited I was to learn that you can make stevia syrup from the leaves!

Stevia Syrup:

1. Mix together 1 part water to 3 parts chopped stevia stems and leaves (by cup).
2. Let sit 24 hours. Test it - is it good? If not, let it sit another 24 hours.
3. Strain the leaves out and simmer the sweetened water for 20 minutes or so (I'm assuming to keep it from going bad?). Remove from heat and cool. Then use or store it in the fridge for a few weeks.

In the above one, you start off the same, with only one cup of water to soak 3 cups of leaves in, but after you strain the leaves out, you add 2 cups of water before simmering for 20 minutes.

It looks like the recipe with additional water added may be the original, while the secondary source might have simply missed a step. So I think I will try to do this first with a 1:1 ratio and see how it goes!

Once I have Stevia growing again this spring, LOL.
